A Healthy Salad that will last a Week

I had the pleasure of attending a cooking class there earlier this year and have been eating this recipe for House Chopped Salad with Citrus Vinaigrette dressing ever since. I buy and prepare ingredients over the weekend and it lasts in its container for 5 days with just me grazing on it twice daily. Everyone who eats it describes themselves as “addicted” to it. It is excellent and I pass on to you the recipe I have given to many of my patients.

For the Salad:

2 Hearts of Romaine, washed, dried on towels, and chopped (expect a little rust color later in the week if you use a steel knife for this. It will not affect flavor, just appearance.)

2 Shallots or one small red Onion peeled and diced

1 Sweet Bell Pepper(red, yellow, orange) seeded and chopped small

4-6 Radishes, washed and chopped

3-4 Stalks Bok Choy, washed and chopped (no leaves)

I also chop into tiny pieces 2 medium carrots and I add sprouts like mung bean, alfalfa/radish or broccoli/mustard. These can all be kept together in a large container for 5 days easily.

Other toppings at the time it is served are:

Feta Cheese, Cherry Tomatoes, and 3 oz. portions of sliced grilled chicken or lean steak. I also like mandarin orange slices.

The dressing is made from citrus - orange, blood orange, or grapefruit. I hand squeeze them on my stainless steel citrus reamer. I use one large orange or medium pink grapefruit and two medium Lemons. The fruits are juiced dry and the pulp separated. I put the juice with some fresh ground pepper, and a 1/2 tsp of raw sugar into a glass container. I add an equal portion of EVOO and shake it well before serving.

Now, you have very nutritious vegetables and sprouts, protein from the meat and unsaturated fat from the oil. It is loaded with antioxidants, vitamins and fiber. 3 cups per day garnished with meat and citrus fruits and tomatoes and dressing will supply your entire vegetable and about 1/2 your fruit requirement for the day. It is relatively low in calories if you keep the meat portion lean and limit it to 3oz.
